Easy and Simple Meals to Make While Stuck at Home

COVID -19 has become a pandemic and has forced many major cities and states to shut down. With lockdowns called to action, this has left many people confused on the next step and trying to stay as calm and collected as possible. The lockdowns in many parts of the country have forced people to remain in their homes with little food ideas during quarantine to try out. During this time restaurants, bars, and other non-essential businesses have shut down and citizens are piling into the grocery stores getting all the food essentials they need to last them during this time. 

Confined to your home and trying to make sure you have enough food as well as making it last can seem like a scary thought. So here are some food ideas during quarantine and recipes that you and your family can cook up during this quarantine. Also, it doesn’t hurt to look up easy prep meals. Most of these meals are from those cooking videos you see on Facebook or either from a food website that found and quickly put together myself and have been fixing for quite a while.

These ideas are just simple food recipes that you can easily make if you are craving an easy meal for whichever time of the day. Most of these recipes are things you may already have in your home. Meat and chicken stock in your freezer and canned vegetables in your pantry or that can of sloppy joe that’s in the back of your pantry that you think you’re never going to use. Here are some quick and simple food ideas during quarantine to try. It’s not pasta a la Jon & Vinny’s, but it will do.  

Disclaimer: I’ve had the pleasure of cooking all of these meals and in the process, I’ve changed the recipes to fit my needs (except for the pasta). I’ve attached a similar recipe to each dish the only thing changing would be the ingredients but the cooking process and times are still the same. 

Turkey Burgers 

INGREDIENTS

1 lb. ground turkey or beef (whichever meat you prefer)

2 large eggs

Season Salt 

1 cup of freshly chopped spinach 

Garlic Salt 

Onion Powder

Freshly ground black pepper

Corbona Pasta This recipe I found online and it’s my go-to when I’m craving pasta but want to make it quick. 

INGREDIENTS

12 oz. spaghetti

Kosher salt

3 large eggs

1 c. freshly grated Parmesan

8 slices bacon

2 cloves garlic, minced

Freshly ground black pepper

Taco Lasagna: Absolute favorite, I just got creative with this one. I’m pretty sure there are plenty of recipes online but here is how I do it. Also, tip you can also freeze this to make it last if you want to have it another time. 

INGREDIENTS

1 box of pasta (whichever you prefer) my favorite is rigatoni or shell pasta

1 lb of ground turkey 

1 can of black beans 

1 can of tomatoes 

Sour Cream 

Salsa 

Cheddar Cheese 

Sour Cream 

Bag of tortilla chips

 

Sloppy Joe Quesadillas – This was my go-to in my college days quick and easy and filling. 

INGREDIENTS 

1 bag of tortillas 

1 can of Sloppy Joe

1 bag Shredded Cheddar Cheese

¼  cup of chopped green pepper 

¼  cup of chopped red pepper 

¼  cup of chopped yellow pepper

Chicken Pot Pie: When my mom would fix this for me this is just one of those meals that just reminds me of home. 

INGREDIENTS  

2 cans of Mixed Vegetables

1 can of creme mushroom soup

1 can of chicken broth 

½ of a chicken breast 

1 pack of pie crust
